Tahini Dressing

We are tahini addicts in my house. We put it on our morning porridge, spoon it onto yoghurt bowls, spread it on toast instead of peanut butter, add it to smoothies for richness, drizzle it on falafel, the list goes on. Whenever I was near the end of a batch of salad dressing I would bulk it out by adding some tahini, then I realised, we don’t need to wait, we can have nice things now.

Ingredients

¼ cup tahini

¼ cup red wine vinegar

¼ cup extra virgin olive oil

½ tbsp smooth Dijon mustard

2 tbsp maple syrup

Place all ingredients into a jug with a pinch of salt and blend with an immersion blender. Alternatively, place into a bowl and whisk vigorously by hand. Adjust seasoning to taste. (The best way to do this is to taste it with a lettuce leaf or piece of vegetable - it gives you an accurate sense of how it will taste in context).
